For so long, I was a fan of dessert maven aka “The Sweets Stylist” Amy Atlas. She’s the one who inspired me to make the dessert table the pinnacle of every party. A couple of years back, we met on Twitter and have since become friends.

Today, Amy is sharing a fun recipe you can try just in time for Halloween. Whether you’re hosting a Halloween party this weekend or prepping for Monday’s festivities, kids and adults will both love these mini treats. The best part is you won’t have to spend too much time slaving over the stove. Enjoy!


Finished Pumpkins


Easy Spooky Mini Pumpkin Pudding


Ingredients

Ingredients

  • 1 (5 ounce) package instant vanilla pudding mix
  • 1 (15 ounce) can solid pack pumpkin
  • 1 ½ tablespoons pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • 1 16 ounce (or 2 8 ounce) container Cool Whip
  • 12 small pumpkins
  • 12 Oreo cookies

Directions

In a large bowl, mix together the instant vanilla pudding mix, canned pumpkin, pumpkin pie spice, and cinnamon.

Fold in the Cool Whip. Put in refrigerator to chill, at least half hour.

Meanwhile, clean off the pumpkins with a moist paper towel. With a sharp knife or pumpkin carving tool, cut off the stem end of the pumpkins.  Set tops aside.

Using a melon baller or spoon, hallow out the inside of the pumpkin, making sure to remove all of the pumpkin seeds and pulp.

Put the refrigerated pumpkin pudding mixture inside of each pumpkin hole and level off with a knife.

In a food processor, grind the Oreo cookies to form Oreo crumbs.

Put stencil (see template below) on top of each pumpkin and pour Oreo crumbs on top to create eyes, nose and mouth.  Remove stencil and excess Oreo crumbs.

I'm not having a party, nor attending one but ever since I saw this I haven't been able to get it out of my mind as I love anything pumpkin related!  So, I just made it, it's soooooooo good!!! I unfortunately didn't put the pudding in the cute little pumpkins, I just wanted the filling.  It's setting as I type (the required hour), I'm thinking I may make it again for Thanksgiving and put it in a graham cracker crust pie shell.  Thank you so much for the recipe. :)
